70cl / 42% – A sweet, herbal rum from SC Dogs on St Martins, Isles of Scilly, that is inspired by William Gibson, who captained the St Martins pilot cutter in the 1800s, guiding many ships safely through treacherous waters. Made in small batches and matured on the island, the palate offers notes of vanilla, green oak, grass, caramel and light smoke that linger in the finish.
