Each individual component of this blend (Oloroso and Pedro Ximenez) is aged in its own Solera. After blending, the wine is further aged for three years in a solera of 33 American oak casks before bottling. A dark mahogany colour with bronze hues. Concentrated aromas of ripe fruits, mocca, cocoa and toffee. Very complex on the palate, with a clean acidity and flavour of raisins, nuts, crystallized orange and candied peel. Food pairings: Ideal with rich cakes, egg based puddings and blue cheeses (Stilton, Gorgonzola). Also as an ideal digestif for the sweet-toothed.
