The name Old Tom Gin came from wooden plaques shaped like a black cat (an Old Tom) mounted on the outside wall of some pubs above a public walkway in 18th-century England. Owing to the Gin Craze, the British government tried to stem the flow of gin with prohibitive taxes and licensing, which drove the scene underground. Under the cats paw sign was a slot to put money in and a lead tube. From the tube would come a shot of gin, poured by the bartender inside the pub. Juniper berries, coriander and cardamom sourced from a nature reserve in Uzbekistan, Central Asia. Fairtrade sugar added to the gin before ageing is sourced in Central or South America. The other spices are sourced in France, 30km from the micro-distillery. Ingredients: Juniper, Coriander, Cardamom, Grains of paradise, Calamus roots, Angelica roots, Brown cane suagr. Style: Light gold. Nose: Fresh smoothness marked by scents of liquorice, with a hint of vanilla sugar. Palate: Extremely easy to enjoy, its freshness and acidity dont over look lemon balm and juniper aromas. Finish: Sweet finish accented with lingering touches of pepper and cinnamon.
