Cool Western Cape grapes
Devised in Sweden by cousins David Sommestad and Adam Malmnäs, Cognato is produced in the beautiful Western Cape of South Africa. Grapes are grown on bushes close to the ocean on the Cape’s cool, dry, coastal region. This assures a long, cool growing season and rewards drinkers with some top wines.
Making Cognato Red
Picking of fully mature grapes. Maceration to extract colour and tannins. Fermentation with a cultured yeast at temperatures between 25 °C and 28°C. Another 2 weeks in the fermentation tanks, with skins. Integration and full development of the tannin structure. Finally, careful gentle removal of the alcohol with a vacuum spinning cone process. No alcohol, integrity of the wine intact.
