Wine is generally considered gluten free and most contain less than 20ppm of gluten as the main base is grapes. However small traces may be found in wine with flavours or if wheat paste has been used during the process. Always check the label.
Due to the low alcohol content of wine, YES it can freeze. Freezing wine makes it expand which can lead to the cork coming out or oxidisation occurring. Freezing wine for long periods will compromise the flavour. If you want to cool a bottle of wine in the freezer this is better, but never freeze sparking wine as it can become explosive.
Put simply, it depends. A red can last 2-3 years, a white wine 1-2 years & fine wines can last for much longer 10 – 20 years if stored. For all examples this can be lengthened with proper storage. 
There are roughly five steps to make wine- gathering the grapes, crushing the grapes, the fermentation process (red wine fermented with grape skins on at 70-80 degrees and white wine is separated from the skin and pressed and fermented at lower heat 45-60 degrees, next is the maturing process and finally bottling.
For a standard red wine decanting into a wine decanter for 1-2hrs prior to drinking should prove the best taste, white wine can also be decanted, but generally needs far less (15-30 minutes) or no time as they are usually ready to drink. If you are in a hurry pouring into a glass and swirling vigorously can also be enough to help the wine breathe. If it is a vintage wine the aeration process can be less (a few minutes even) and needs to be determined on a wine by wine basis.
