Primitivo del Salento 2021, Francesco Candido

Sourced from bush vine trained, well established Primitivo vines within the Candido estate. The bunches are hand harvested, crushed into steel and fermented with gentle skin contact. Ageing is also in stainless steel in order to soften the structure and bring out the ripe fruit characteristics gained in this hot, dry part of Italy. It is bottled on site after stabilisation and a light fining.
