La Higera Wheeleri Sotol

70cl / 45.1% – Traditional sotol produced in the Mexican state of Chihuahua. Made from the dasylirion wheeleri plant – also known as the desert spoon – this is a cousin of Mezcal and Tequila particular to Northern Mexico. Long roasting of the desert spoon’s heart followed by wild fermentation and distillation on small copper pot stills results in an intensely flavorsome spirit. Expect notes of wild herbs and pineapple combined with a light, mineral smokiness.
