50cl / 15.5% – Aged in a solera founded in the 1930s, this long-aged Pedro Ximenez is dense and complex with notes of fig, date, raisin and liquorice. This either needs big food to complement it, such as blue cheese or dark chocolate, but also makes a delicious ice-cream sauce.
